Porretta Slow

Porretta Slow is an annual event aiming to introduce quality food and wine enthusiasts to the food and wine identity of the Tuscan-Emilian Apennines with markets, workshops and cooking shows dedicated to the biodiversity of the Mountain Product, from honey to mushrooms and truffles, from Parmigiano-Reggiano to different types of chestnut flour.

Culture and traditions of a pure area where knowledge merges with flavors into a unique experience that only here you can live and (re)discover.

Let’s talk about chestnuts and sweet flour, mushrooms, truffles, Rosa Romana apple, honey and his majesty Parmigiano Reggiano, king of the many dairy products of the Tuscan-Emilian Apennines. And again: ancient grains, walnuts, hazelnuts and … the prince of the Apennine preparations: TheTortino Porretta.

This edition of Porretta Slow will sign a mile stone for having unveiled the latest Corsini’s masterpiece: the Tortino Porretta with chestnut flour. Born from an busting idea of Chef Franco Santoli, the new pie has literally overwhelmed the web and the streets, with a resounding success, thanks to the skilful workmanship of the Capugnano’s L’Albero del Pane.

Who would have thought that an ancient ingredient could have been so current?

Cultura e tradizioni di un territorio incontaminato in cui i saperi si fondono con i sapori in una esperienza unica che solo qui puoi vivere e (ri)scoprire.

Parliamo di castagne e di farina dolce, di funghi, tartufi, di mela rosa romana, miele e confetture a Km Zero, di sua maestà il Parmigiano Reggiano, re dei tanti prodotti caseari dell’Appennino Tosco-Emiliano. E ancora: grani antichi, noci, nocciole e… il principe delle preparazioni dell’Appennino: Il Tortino Porretta.

Questa edizione di Porretta Slow resterà negli annali per aver svelato l’ultimo capolavoro di casa Corsini: il Tortino Porretta alla farina di castagne. Nato da un’esplosiva idea dello Chef Franco Santoli, attraverso la sapiente lavorazione dell’Associazione L’Albero del Pane di Capugnano, il nuovo tortino ha letteralmente travolto il web e la piazza, con un successo strepitoso.

Chi lo avrebbe mai detto che un antico ingrediente potesse essere così attuale?

Every time we talk about Porretta Terme we always mean the City of Music. Each edition of Porretta SLOW is followed by quality music, excellent producers, creative communities. This year’s edition, with its very Rock connotations, was coordinated by the girls and boys of the JRF Music Odyssey, a musical experience grown in Castel di Casio, which is celebrating its first twenty years of activity this year.
